Pineapple "Easy" Cake - by Karen Zach

This has been my daughter's favorite recipe for 20 years - and now she says it's her baby's too!!

I N G R E D I E N T S

• 2 C. Sugar
• 2 tsp. soda
• 2 C. flour
• #2 can crushed pineapple (do not drain)
• 2 eggs

Mix all ingredients in a 13 x 9 x 2 pan. Do not grease. Bake at 350 for 35-40 minutes -- do not overbake.

Top with a cream cheese icing of 1/2 stick softened butter, 1, 8-oz Philadelphia Cream Cheese, 1 C. confectioner's sugar and 1 tsp vanilla.

Note the name -- pineapple "easy" cake!! It's yummers!! -- enjoy!!
