Renee' DiPatri's Savory Ozark Puddin'

A Southern United States dessert that is one of my family favorites. Not really a pudding, but more of a cake type wonderful treat.

INGREDIENTS

  • 1/3 cup all-purpose flour
  • 3/4 cup sugar
  • 1-1/2 tsp. baking powder
  • 1/8 tsp. salt
  • 1 egg
  • 1 tsp. vanilla
  • 1 medium apple finely chopped
  • 1/2 cup chopped nuts

Heat oven to 350 degrees. Beat sugar, flour, baking powder, salt, egg and vanilla in small bowl on medium speed until smooth. (1 minute) Stir in apples and nuts. Pour into greased 9 inch pie plate. Bake until golden brown (about 30 minutes) Best served warm... quick and easy!

I normally add cinnamon and nutmeg (sprinkle to taste) You can also vary it by adding other fruit (dates, peaches, coconut) You can mix them in or sprinkle on top. This is a good recipe by itself or a good base to "experiment" with.
